Homemade granola

Good morning, everybody! Question of the day: what do you people have for breakfast, usually?
Personally, during summer I love fresh fruit at any time...but when weather gets colder and my favourite fruits - such as watermelon, peaches, apricots and cherries - start to disappear (fortunately I still have got mango, bananas and pineapple, but every year is a big tragedy anyway, poor me!), than I cannot do without my warm cup of rice milk and coffee and some good homemade stuff like biscuits, cakes or...granola! I like to try different mix, this is one of our favourites:






INGREDIENTS:
400 gr oat flakes
80 gr puffed rice
250 gr mixed nuts
150 gr dark chocolate
3 full tbs brown sugar
3 full tbs malt of your choice
6 full tbs coconut oil (put in the fridge for a while to solidify it)
1 pinch of vanilla extract

PROCEDURE:
Melt oil and sugar on low heat, then add malt and vanilla. In a large bowl mix oat flakes, puffed rice and chopped nuts, then pour slowly the liquid mix and stir very well. Dehydrate overnight and, on the following morning, add also chopped chocolate. Store in the fridge in order to keep it more crunchy.
