Healthy, appetizing, nourishing: one of the best dinner I've ever had.
INGREDIENTS (serving 2):
10 big Portobello mushrooms
100 gr dried adzuki beans
200 gr corn
2 handful datterini tomatoes
1 small avocado
½ small red onion
4-5 tbs soy sauce
apple vinegar
olive oil and salt to taste
PROCEDURE:
Soak beans overnight, then cook for 45 minutes with flavourings of your choice (e.g. bay leaves and garlic). Better to make it in advance and let them cool down in the fridge.
Finely slice the onion and soak in acidic solution made with water and vinegar (2:1) for at least half an hour, the longer the better.
Clean mushrooms under running water very quickly, dry them with a napkin, brush with soy sauce and cook at 180° for 12 minutes. Meanwhile, mix all the ingredients for the salad (better to remove seeds and mucilage from tomatoes) and season it. Fill your mushrooms boats and enjoy!
