Yeah, I know, it's November and I'm talking about SPRING...I wish it was! In the meantime, I can imagine to enjoy this simple and tasty quinoa salad laying on a blooming lawn under a lukewarm sun :) you should try as well!
INGREDIENTS:
125 gr quinoa
150 gr frozen peas
2 carrots
250 gr champignon mushrooms
1 spring onion (what else otherwise ahah)
1 handful black olives
2 tbs olive oil
3 tsp vegan mayonnaise or tartar sauce (optional)
fresh herbs of your choice (optional)
PROCEDURE:
Rinse quinoa very well and place in a pot with frozen peas, a generous pinch of salt and double quantity of boiling water. After five minutes, add chopped carrots. Let it cook for other five minutes, then add also chopped mushrooms. Five minutes more and it's ready. Drain from rife water, then place in a bowl with sliced olives, spring onion finely chopped and season with oil and the sauce you choose. Add fresh herbs if you wish. Eat at room-temperature.
